Cheese makers in the siege

Tatiana Antonenko, International Dairy Magazine

The development of a strong dairy industry in Ukraine began in the early years of Soviet power. From 1925 to 1930, 55 steam- mechanical plant were built by typical designs. For five years these plants were three times more. Over the next decade dairy factories were built in Kiev, Kharkov, Dnepropetrovsk, Lugansk, Donetsk, Slavic and other cities. Many of them are in no way inferior to the European dairy companies. On the eve of WWII in Ukraine there were large companies which specialized in the production of butter, whole milk products, canned milk and cheese. It should be noted that Ukrainian dairy company equipped with typically Russian equipment: technological separators, pasteurisation, coolers and more. In the Caucasus republic they received power equipment. Particular attention was paid to the development of dairy farming and industry. All news then were about farm yield, starting new industrial facilities and the creation of specialized research institutes. In Russia, on the basis of Uglich cheese factory, a special research laboratory on cheese and dairying was created, which then became the All-Russian Institute… And in Ukraine in 1959, Institute of Technology of milk and meat was created.

Thus, Russian and Ukrainian dairy industry for many years was working and developing, feeling the constant public attention and support.
